Step Two: Primary Drying

Also called proper freeze-drying, this step involves removing frozen free water through sublimation. Sublimation directly transforms ice into vapor without going through the liquid state.

Step Three: Secondary Drying

In this phase, the remaining bound water is removed, achieving the desired humidity level. It’s also known as desorption drying.
